Garlic Butter Shrimp & Quinoa Bowl

Ingredients:


  • 1 lb shrimp, peeled & deveined
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli
  • ½ tsp smoked paprika
  • ½ tsp salt
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Directions:


1️⃣ Heat butter in a pan. Add garlic and shrimp, season with paprika and salt. Sauté until shrimp is pink (3-4 mins).
2️⃣ In a bowl, add quinoa and steamed broccoli. Top with shrimp and drizzle lemon juice.
3️⃣ Garnish with parsley and serve warm.


Spicy Air-Fried Salmon & Cucumber Herb Salad

Ingredients:


  • 4 (6 oz) skinless salmon fillets
  • 1 tbsp salt-free garlic-herb seasoning
  • ¾ tsp kosher salt, divided
  • 3 tbsp finely chopped red onion
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 6 cups chopped romaine lettuce hearts
  • 2 cups halved cherry tomatoes
  • 2 Persian cucumbers, sliced
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh dill
  • 1 oz feta cheese, crumbled
  • 2 tbsp chopped pistachios

Directions:


1️⃣ Preheat air fryer to 400°F. Pat salmon dry and season. Cook for 8-10 mins.
2️⃣ In a bowl, whisk onion, oil, lemon juice, mustard & salt. Toss with lettuce, tomatoes, cucumbers, basil & dill.
3️⃣ Serve salad topped with salmon, feta, and pistachios. Enjoy!


Avocado & Chickpea Toast

Ingredients:


  • 1 ripe avocado, mashed
  • ½ cup canned chickpeas, drained
  • ½ tsp garlic powder
  • ½ tsp chili flakes
  • 2 slices whole-grain bread
  • 1 tbsp feta cheese, crumbled
  • 1 tsp lemon zest
  • 1 tsp olive oil

Directions:


1️⃣ Toast bread until golden.
2️⃣ Mix mashed avocado with chickpeas, garlic powder, and chili flakes.
3️⃣ Spread on toast, top with feta, lemon zest, and a drizzle of olive oil.


Greek Yogurt Berry Parfait

Ingredients:


  • 1 cup Greek yogurt
  • ½ cup granola
  • ½ cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp honey
  • 1 tbsp chopped almonds

Directions:


1️⃣ Layer Greek yogurt, granola, and mixed berries in a glass.
2️⃣ Drizzle with honey and sprinkle almonds on top.
3️⃣ Serve chilled for a refreshing treat!


Spiced Roasted Chickpeas & Kale Salad

Ingredients:


  • 1 can chickpeas, drained & rinsed
  • 1 tbsp olive oil
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 4 cups chopped kale
  • 1 tbsp lemon juice
  • 1 tbsp tahini

Directions:


1️⃣ Preheat oven to 400°F. Toss chickpeas with oil, cumin, paprika & salt. Roast for 20 mins until crispy.
2️⃣ Massage kale with lemon juice & tahini for 1-2 mins.
3️⃣ Top with crispy chickpeas and serve.
